I'm trying to be much more conscious of what I'm putting in my mouth these days so thanks to Geoff I've tried some Paleo-friendly food on my own.
Tonight I made Thai Coconut Lime Shrimp:
and Cold Sesame Cucumber Noodles:
The shrimp was a little clumpy because it didn't coat well, but it was very flavorful and filling! The sesame noodles were also wonderful and though I think the two combined may have made for a dish rather high in natural oils, it was definitely a worthwhile treat.
It all took a little longer to make than I thought too, so I when I finished I was so hungry that I ate more quickly than I would have liked. Not sure if either of these will be revisited for a while except that there are just enough leftovers for another meal, and the work is already done!
